Wolfberry Vinaigrette
11/2c.frozenstrawberries,thawed, **!c.Ningxiawolfberries,hydrated, "c.lemonjuice, 2 Tbsp. white wine vinegar, 1 tsp. sea salt , ! c. Blue Agave, up to 1c. extra virgin olive oil.
*To hydrate, cover ! cup wolfberries with ! cup warm water until soft; don't drain.
Puree all ingredients, except olive oil. Add olive oil to blender slowly to assist in the emulsification process. Only add as much as you think you need for consistency. Store covered in the refrigerator for up to two weeks. Makes up to 2 ! cups.
